A 2nd shot at mom’s 60th Birthday

Last year Martin (my brother) and I “kind of” miscalculated and invited my mom’s friends to a splendid vegetarian coooking class to celebrate my mom’s 60th birthday. When we were right in the middle of the preparations we discovered that our mom was turning 59 and not 60, but by then it was too late to turn back, so we gave her a very memorable 59th birthday.

Well this year she definitely turned 60, though my mom will deny doing so, claiming that it’s closer to 40-something…

The weather was gorgeous, so Kjersti and I picked up my mom and drove to Sola Stranden, where they enjoyed some Prosecco while we all ate some fresh berries and grapes with Kesam (I was the designated driver, so I had to make do with drinking Mosell).

After enjoying the sun and gentle breeze we drove back to our apartment, where we ate a nice 3-course dinner. The appetizer was a succulent mix of Salma lax, avocado and ginger in what is called a Thai lax and avocado tartare. The main course was freshly fished shrimps with dill, lemons, fresh bread, dip and mayonnaise. Where you clean the shrimps yourselfand make the sandwiches exactly like you want them. For desert we enjoyed Kjersti’s newly baked chocolate cake.

It was a great day filled with lots of laughs and good food.
